Spinach goat cheese salad

I love goat cheese. To a ridiculous amount. I pretty much zero in on anything on a menu that says goat cheese. I often order it on the side of things just to add to any dish. My love for goat cheese is quite deep.

As much as I love goat cheese- it’s only part of the reason why I love this salad. This salad is addictive. I can never have just one serving. It has the perfect combinations of creaminess, sweetness, crunchiness, and green that I look for in a salad.

I’ve somehow managed to perfect the right amount of toppings per lettuce/spinach mix as well, something that is not easy to do. I generally have a problem with salads that are primarily lettuce and dressing. The lettuce is usually just a filler and the dressing is just trying to make it taste good. The ingredients in a salad should speak for themselves, and the dressing should bring out their flavor. That’s my personal belief about salad. Stop me before I go on a rant about it.

Anyways, this salad will not disappoint. It is perfect for summer. Although, I love it all year long.

Spinach goat cheese salad

Here is the recipe:

Ingredients:

For the salad:

  • 5 oz baby spinach and spring lettuce mix, or just baby spinach if you prefer
  • 2 medium granny smith apples, cut into small pieces
  • 1 large ripe avocados, cut into small pieces
  • 2-4 oz goat cheese
  • 10 oz strawberries, cut into small pieces
  • 1 cup crushed walnuts

For the dressing:

  • equal parts olive oil and balsamic vinegar
  • 1-4 cloves garlic, finely chopped

Directions:

  • Wash the greens well and drain (even if it says they are pre-washed)
  • Wash the apples and strawberries and cut into small pieces (I prefer about dime sized pieces)
  • Put the greens, apples, and strawberries in a large bowl. Add the avocado, goat cheese, and walnuts and mix well
  • Add dressing (keep on the lighter side) and toss
  • Serve!

The amounts in this recipe are not exact. I estimated them based off of serving sizes that we usually use. You can go ahead and go with your gut if they do not feel like enough or feel like too much for you.

I find that this salad is filling enough to be a meal- but I’m sure it would be delicious with a little grilled chicken breast on it too.

Honestly, anything that has avocado and goat cheese has my heart. This salad has the right combination of sweetness to satisfy your sweet tooth, and fats and fiber to satisfy your hunger. Not to mention lots of great nutrients. When we make it, it usually lasts us several meals.

The ingredients to this salad are pretty much always on our grocery list. So much so, that the last time Lars went to the grocery store and I gave him a list that had apples and spinach on it, he got granny smith apples and the spinach spring lettuce mix instead of honey crisp apples and plain baby spinach, which is what I wanted. My fault, for not specifying.

I’m sad I’m not eating any today. We need a trip to the grocery store.

Top ten uses for three ingredient paleo naan

I’ve been gluten free for several years now, and I’ve experimented with some paleo recipes thrown into the mix. I was so happy when I found this one. I thought it was too good to be true, but I tried it anyways. And the results were amazing.

I am a huge fan of Indian food and I think naan is incredibly delicious, but unfortunately, very full of gluten. I’m always sad not to partake at Indian restaurants, but the rest of the food is always worth it. However, since finding this recipe, I don’t miss naan anymore.

I got the recipe from My Heart Beets. It is so fast, easy, and that Lars and I have been using it for all kinds of different things. I thought it would be fun to do a post on different uses for this versatile recipe. When we serve this naan we love making people guess what the 3 ingredients are in the recipe. So far no one has gotten them.

So, first things first, head on over to My Heart Beets for the recipe.

Just a few notes on the recipe:

  • If you use salt, try to use celtic sea salt or himalayan sea salt if you have it
  • When you cook the naan, I recommend using coconut oil if you plan to do a sweet recipe and olive oil for a savory recipe.

So we have learned over the past few months that there are a ton of different uses for this recipe.

Here are 10 awesome uses for Paleo Naan:

1. The obvious- use as naan as a bread side dish (especially with curry!)

2. Make thin and use as crepes- fill with fruit

3. Use as sandwich bread (similar to a pita)

Paleo naan sandwich (turkey, goat cheese, and avocado, yum!)

4. Use as pizza crust (perhaps with amazing pumpkin sauce instead of tomato- it’s amazing)

5. Cut into quarters and dip into nutella (or hummus or any other dip)

6. Cook batter half way through and instead of flipping, fill with fruit and fold up, glaze with cinnamon, bake the rest of the way (this was so amazing when we made it- I’m going to have to do a separate post just for this paleo pastry. So keep your eyes open for it!)

9. Make thick in a small pan and use as a burger bun

I haven’t tried all 10 of these, but all that I have tried have all been amazing. Seriously, this recipe is too easy it seems too good to be true. But it IS TRUE.

It is a great recipe to make if you need bread in a pinch because all you need are three ingredients that have very long shelf lives! Seriously, I am making myself drool just looking at these pictures. I have to go make more.
