Update: This is a revisit of my old post on Paleo Coconut Curry Chicken Tenders. I’ve updated the pictures and the recipe with the changes I’ve made over time.

I’ve been gluten free for a few years now, and in some of my gluten free cooking I’ve also experimented with paleo recipes. I think they’re a lot of fun and I’m a huge fan of almond flour and coconut oil, which are in basically every paleo recipe.

So, in experimenting with paleo recipes, I came across this incredible recipe for paleo coconut chicken on pinterest, and added a few tweaks. The original recipe is from Beezy Body Fitness.

It is so fast and easy. The best recipes yield delicious flavor without a crazy amount of work, and this is one of them. These basically taste like chicken tenders with a hint of coconut and curry (or a lot of curry if you are like me).

Put the flour and seasoning in one bowl, eggs in another, and shredded unsweetened coconut in a third bowl. Dip chicken strips in egg, then flour, then coconut.

Trust me- you are going to want to make these all the time. So easy and delicious they will make you wonder why coconut and chicken aren’t always together.

They are the perfect main dish for a night when you don’t have too much time. The prep takes less than 10 minutes and they only take about 15 minutes to cook. Fast and easy, just how I like my cooking.

paleo coconut chicken

Ingredients

  • 1 lb organic chicken tenders or chicken breast cut into strips
  • 1/2 cup almond flour
  • 2 eggs
  • 1.5 cups unsweetened shredded coconut
  • 1 teaspoon of curry powder (or more to your liking)
  • coconut oil

Directions

  • Preheat oven to 400 degrees
  • Grease a cookie sheet with coconut oil (you can also use parchment paper instead of oil, either works)
  • Mix flour and curry powder in one bowl, put eggs in a second bowl, and the coconut in a third bowl
  • Dip chicken strips into egg, then curry and flour mix, then coconut
  • Optional: Sprinkle additional curry powder on chicken tenders if you’re really nuts for it like I am
  • Bake at 400 degrees for 12-17 minutes, or until lightly browned on the outside and fully cooked

I like to eat these with mustard, but I bet they would go great with different kinds of sauces. Let me know how the recipe goes for you and any dipping sauces you use!

paleo-chicken-tenders-2Yum! The perfect healthier alternative to chicken tenders. Everyone loves chicken tenders, so you gotta indulge somehow.

Sometimes I feel like I get in a rut with gluten free cooking and get lazy making the same couple of things over and over. And let’s face it- that’s boring. And not good for you.

So I made this list to inspire myself and other like minded gluten free eaters that you can mix it up and still make fast and easy meals. That are mostly healthy. There’s a couple of paleo recipes, a few vegetarian, and they’re all gluten free. Something for everyone.

Enjoy!

1. Coconut Curry Chicken Tenders

coconut-chicken-3

These are my favorite gluten free chicken tenders, that are also paleo. Give me coconut and curry any day! The coconut is perfectly toasted and crunchy and tastes like breading. And they are ridiculously easy.

2. Pork Chops with Apple and Onion

pork-chop-apple-onion-post

These pork chops by Of Goats and Greens were easily the best pork chops I’ve ever made. The apples were my favorite part. They were definitely easy and quick. They are also paleo-friendly. You can’t go wrong!

3. 3 Ingredient Pesto Chicken

3 ingredient pesto chickenI love anything with three ingredients, and this pesto chicken by Barefoot Hippie Girl is no exception. And I love anything with pesto. This is a great dinner to whip up quickly. Try it with some goat cheese!

4. Chicken Curry in a Hurry

House of Rose Blog’s recipe has you making gluten free pizza (crust and all) from scratch in only 35 minutes. So easy and delicious. Who doesn’t love pizza? Honestly, you just need a good pizza once in a while, even if you don’t eat gluten.

7. Easy Cheesy Enchiladas

enichiladas

These easy enchilada’s from Virtually Homemade are another 3 ingredient winner. If you count the avocado for eating, I guess that’s 4. But still, these will only take 35 minutes to make. 3 ingredients, mexican, and fast? Yes please!

8. Spinach Goat Cheese Salad

My favorite salad ever had to make the list. It is super easy to make and makes a great fast meal. If you love goat cheese and summer salads, you have to make this one.

9. Spinach Artichoke Chicken

I go crazy for spinach artichoke dip. If you multitask, you can make this amazing dish from Add a Pinch in only 35 minutes. Spinach artichoke dip wrapped up into a meal. And this is definitely a healthier version than what you can get in restaurants.

10. Gluten Free Turkey Meatballs

gluten-free-turkey-meatballsIf you’re in the mood for pasta, just whip up some gluten free turkey meatballs from Real Easy Meals. They go well with brown rice noodles, which are my favorite. Or, just eat them without the pasta. Why not? Delish.
